Choose British chicken with the Red Tractor and Union Jack on pack and you’ll know that you’re getting fresh, local birds that are fully traceable back to independently-inspected British farms. Or ask your butcher if it’s British.
Ingredients
225g British chicken mince
1 slice bread, made into breadcrumbs
2 tsp soy sauce
1 tbsp chopped chives
Salt and black pepper
1 tbsp sunflower oil
6 tbsp sweet and sour sauce
100g ready prepared stir-fry vegetables
4 pitta breads
Method
1 Put the breadcrumbs into a large mixing bowl and add the mince, soy sauce, chives and seasoning. Mix together by hand into 16 small meatballs.
2 Heat the oil in a large pan and cook the balls for 5 minutes, turning to ensure even cooking.
3 Add half the sweet and sour sauce and cook for a minute.
4 Remove the chicken balls and keep warm.
5 Add the remaining sweet and sour sauce to the pan, heat and add the stir-fry vegetables. Cook for 4 minutes.
6 Heat the pitta breads for a few minutes under a pre-heated grill. Split to form a pocket.
7 Add the chicken balls and stir fry vegetables to the pitta breads and serve.
