Why not introduce a taste of the Mediterranean to your barbeque this summer with this delicious recipe? The flavoursome tomatoes and peppers really bring out the delicious taste of British chicken, making it an extra special summer barbeque treat.

Choose British chicken with the Red Tractor and Union Jack on pack and you’ll know that you’re getting fresh, local birds that are fully traceable back to independently inspected British farms. Or ask your butcher if it’s British.

Ingredients

12 British chicken drumsticks
Juice of 1 lime
3 tbsp olive oil
2 cloves garlic, crushed
1 red chilli, de-seeded and finely chopped
1 handful flat leaf parsley
1 handful fresh coriander
Salt and freshly ground black pepper

Relish
1 slicing tomato, skinned and diced
4 pieces ready prepared roasted peppers
1 garlic clove, crushed
1tbsp olive oil
1tsp balsamic vinegar

Method

1. Mix the lime juice, olive oil, garlic, chilli and herbs together in a small bowl.

2. With a sharp pair of kitchen scissors or knife, make a deep cut to the bone on both sides of the drumsticks.

3. Rub the herb mix over the drumsticks making sure it goes into the cuts.

4. Cover and leave to marinate in the refrigerator for at least 1 hour.

5. To make the relish, combine the tomato, peppers, garlic, olive oil and balsamic vinegar with a little seasoning and place in a shallow ovenproof dish until ready to serve.

6. Barbecue the chicken over a medium heat for 20-30 minutes, turning regularly, until the chicken is thoroughly cooked.

7. Pour any remaining marinade into a small pan and bring to the boil – pour over the chicken before serving with the relish.

Top tip: When BBQing, always make sure the chicken is cooked thoroughly before eating. To check this, pierce the plumpest part of the flesh and make sure the juices run clear. If not, cook further.
