Whether you are planning a picnic or barbecue, this recipe is delicious served hot or cold. A delicious low-fat alternative to traditional potato salad, it is rich in carbohydrate to give you plenty of energy to enjoy the summer sun. The lime and watercress gives it a lovely, fresh flavour and also boosts up the Vitamin C content – making it great for your immune system.

Ingredients

150g new potatoes, skins left on 1 small shallot, very finely chopped
1 British chicken breast
Handful of watercress
6 ripe cherry tomatoes

Tarragon dressing
Small tub of low-fat crème fraîche
Juice and zest of 1 lime
Generous bunch of fresh tarragon
Maldon salt and freshly ground black pepper

Method

1. Preheat the grill to a medium heat. Grill the chicken breast for 10 minutes. Turn the chicken over and cook for a further 10 minutes or until the chicken is cooked thoroughly. Leave to rest. When cool enough to handle, tear or cut the chicken into strips.

2. To make the tarragon dressing, place all the ingredients in a food processor and mix together until smooth. Only a tablespoon is needed for this recipe, keep the rest in the fridge for a few days – perfect to liven up salads or serve with roast chicken or any cold cuts.

3. Steam the new potatoes until soft but not mushy. Allow to cool before placing in a large salad bowl, along with the shallot, chicken, watercress and tomatoes.

4. Add a couple of tablespoons of the tarragon dressing and mix lightly together to ensure that everything is well coated.
