
BBQ Chicken with a Watercress, Basil & Lime Pesto

Iron-rich watercress is often overlooked, so here’s a great way to work it into your diet. Not only is it a great source of energy, but it is packed full of vitamin C, which helps to protect the skin from the ageing effects of the sun.
Choose British chicken with the Red Tractor and Union Jack on pack and you’ll know that you’re getting fresh, local birds that are fully traceable back to independently inspected British farms. Or ask your butcher if it’s British.
Ingredients
4 British chicken drumsticks
4 British chicken wings
50g ready-prepared watercress
25g fresh basil leaves
½ green chilli (seeds removed)
75g toasted pine nuts
4 tablespoons freshly-grated Parmesan
1 garlic clove (crushed)
2 tablespoons olive oil
Juice of 1 lime
Method
1. Take 4 chicken drumsticks and 4 chicken wings, drizzle with a little olive oil and place on a preheated barbecue for about 15-20 minutes, until the chicken is well cooked.
2. Meanwhile, make the spicy pesto by placing the ready-prepared watercress in a food processor along with the fresh basil leaves, chilli, pine nuts, Parmesan, garlic, olive oil, lime juice and plenty of freshly ground black pepper and sea salt. Mix all the ingredients into a smooth paste.
3. When the chicken is cooked, spoon a tablespoon of pesto on top - the heat will make it turn all lovely and runny.
4. Serve with a vine tomato salad - simply slice ripe tomatoes and drizzle a little olive oil. A delicious, lycopene-rich accompaniment!
