Aromatic Chicken with Apricots & Almonds



Serves 4

1 tbsp sunflower oil
2 onions sliced
1 tsp ground turmeric
1 tsp ground cinnamon
1 tsp ground ginger
4 Red Tractor chicken breast fillets
500ml chicken stock
250g pack dried apricots, halved
25g shelled almonds, chopped or sliced
bunch of fresh coriander, chopped to garnish

Heat the oil in a medium pan and cook the onion for 3-4 minutes until softened. Add the spices and chicken, then stir to coat evenly.

Pour in the stock. Bring to the boil, then cover and simmer for 15 minutes, stirring occasionally.

Add the apricots and simmer for a further 15 minutes. Remove the lid, stir well and continue to cook for 10 minutes more, until the chicken and apricots are tender and the sauce has thickened slightly.

Transfer to a serving dish and sprinkle with the almonds. Garnish with chopped fresh coriander. 


Serve with couscous, flavoured with a little fresh lemon juice.
