Fi's Stout Chicken

Fi's stout chicken_600x401


De-bone the chicken and chop into large pieces (approx 12).

Wrap each piece of chicken in the bacon.

Brown the chicken and bacon parcels in a little oil and add the shallots.

Crumble in 2 chicken stock cubes and add a bottle of stout or dark ale.

Simmer for an hour and season to taste.


Serves 4-6

1 whole Red Tractor chicken
12 shallots, peeled
6 slices smoked streaky bacon
2 chicken stock cubes
1 large bottle of dark stout or ale
