Sprinkle the chicken with the lemon juice and some salt in a bowl and set aside.

In another bowl, whisk all the remaining ingredients except the melted butter together until the cheese blends in.

Mix in chicken, check the seasoning, then cover and place in the refrigerator for at least 3 hours, preferably overnight.

Like all other tikka, this is best char-grilled. If you wish to cook it under a grill, place all the chicken pieces on a baking sheet touching each other, baste with a little melted butter and cook under a medium-high heat until golden brown.

Turn the chicken over carefully so that the pieces do not separate and grill until the other side is browned.

The total cooking time should be about 12-15 minutes.

If char-grilling, don’t place the chicken directly on the grill or it will stick.

Instead, skewer the pieces and support the skewers so they are just above the grill. Cook, turning, until the chicken is browned.

Serves 4

3 skinless boneless Red Tractor chicken breasts cut into quarters
1 tsp lemon juice
1 tbsp double cream
3 tbsp Greek-style yoghurt
1 ½ tbsp finely grated Cheddar cheese
1 tbsp Ginger/Garlic Paste
6 cardamom pods, ground, or 1 tsp ready-ground cardamom
½ tsp ground cumin
½ tsp ground nutmeg
1 small green chilli, finely chopped (optional, but it gives a good flavour)
1 tbsp mustard oil
melted butter for basting
salt to taste
