Chicken Stir-fry with Mango

This dish from Great British Chicken is quick and versatile – you can mix and match the vegetables with whatever you have in the house. The mango gives the stir-fry a fresh, exotic twist.

Choose British chicken with the Red Tractor and Union Jack on pack and you’ll know that you’re getting fresh, local birds that are fully traceable back to independently inspected British farms. Or ask your butcher if it’s British.

Ingredients

1 tbsp sesame oil
1 tbsp groundnut oil
4 x British chicken skinless breasts, cut into strips
1 clove garlic, thinly sliced
200g pack egg noodles
1 tsp fish sauce
2cm piece root ginger, peeled and thinly sliced
Juice of 1 lime
150g mange tout, cut into strips
1 red pepper, deseeded and cut into squares
1 mango, peeled, stoned and sliced
2 spring onions, trimmed and sliced
1 tbsp chilli sauce
1 tbsp toasted sesame seeds
2 carrots, sliced on the diagonal

Method

1. Heat half the sesame and groundnut oil in a wok or large frying pan until very hot. Add the chicken and cook for 15 minutes or until tender and brown, then remove and put to one side.

2. Add the remaining oil to the wok and fry garlic and ginger for 30 seconds until lightly browned.

3. Meanwhile, cook the noodles as per pack instructions, then drain, reserving some of the cooking liquid.

4. Mix together the fish sauce, lime juice, chilli sauce and sesame seeds.

5. Place wok over a high heat and add the carrots, mange tout and red pepper and 3 tablespoons of the noodle cooking liquid. Stir-fry for 3-5 minutes until the vegetables start to colour but retain their crunchiness.

6. Finally, add the mango, chicken and noodles and the sauce mix. Toss together with the vegetables and a further 2 tablespoons of the cooking liquid. Cook for a further 30-40 seconds.

7. Serve immediately.
