Lemon Bay Chicken with New Potatoes



Serves 4

2 red peppers, deseeded and sliced
500g new potatoes, quartered
1 medium red onion, finely sliced
1 tsp olive oil
4 eRed Tractor chicken breast fillets
4 large fresh bay leaves
4 slices fresh lemon
100ml dry white wine or chicken stock

Preheat the oven to 220°C/gas mark 7.

Place the peppers, new potatoes and onion together in a roasting tin, sprinkle with the olive oil and seasoning. Toss together, then bake for 20 minutes. Reduce the
oven temperature to 200°C, gas mark 6.

Make a slit down one side of each chicken breast and insert a bay leaf and lemon slice into each. Season and arrange on top of the vegetables. Sprinkle with the white wine or stock and return to the oven.

Cook for 25–30 minutes, basting with the juices until the chicken is cooked through with no pink meat.

Serve with a green salad.
